Though now almost extinct in Japan, these ancient practices have been in constant use for more than 27 years at the American Miso Company, the largest traditional miso works in the world. GREAT EASTERN SUN Trading Company came into being in 1981 as the sales and distribution arm of the American Miso Company, maker of MISO MASTER Organic Miso, the first American miso made using ancient traditional Japanese techniques and the world’s most respected artisan-crafted organic miso. Shortly thereafter, GES began importing many of the other traditional foods that are so vitally important to the natural foods diet. Using only domestically grown organic grains and beans, and handmade koji, the Hallmark of traditional miso, MISO MASTER Organic miso is naturally aged in wood without temperature control, yeast accelerants, or preservatives such as alcohol, all of which are used by commercial miso makers.
