Our love of Mediterranean food inspired this salami. Za’atar is a seasoning blend of sumac, thyme, and sesame that compliments grilled lamb, so we thought it would be cool to use it in a salami. We add a bit of cane cola for a hint of sweetness and barky herbaceous-ness that plays well with lamb.
