Farm Highlight: Berle Farm, Hoosick, NY

Berle Farm is a 600-hundred acre piece of farmland in Hoosick, NY, a small town in the northeast corner of Rensselaer County. The farm has been certified organic since 1997 and has evolved to a low outside input farm, where they produce cheese, yogurt, beef, apples, vegetables, hay, wheat, oats, corn, and many other food items. Their raw milk cheeses are hand stirred and pressed individually. They are turned and brushed with sea salt twice a week for 3 mos. to 3 years. The cheeses are a testimony to their dedicated work bringing together the elements of weather, grass, cow health, tillage, and community.
