Einkorn is one of the earliest cultivated forms of wheat. This ancient grain is higher in protein, trace minerals and essential amino acids than any other wheat. Similar to spelt flour, its protein composition is lower in gluten then modern wheat varieties and may be tolerated by some gluten sensitivities.
