Appearance
Small wheel wrapped in paper and packed in a
round wooden box. The cheese has a fine,
lightly yellow ridged rind and extremely creamy
paste.
Flavor
Think butter, but better. Screamer stands out
because of its less fluffy and more compact
texture and more cheesy profile elevates the
flavors beyond just cream and fat.
History
Although in Switzerland the classification
“triple cream” doesn’t exist and all cheeses
with over 60% fat in dry matter are considered
double cream, Moser Screamer is a classic
triple cream with 75% fat content. It is one of
the few triple creams from Switzerland. This is
a mini version of the cheese. Adding organic
cream from a farm in BonCas dairy’s
neighboring village, cheesemaker Ueli Moser
creates a dense, heavily buttery, almost
sinfully lush little cylinder with a thin, light,
membrane-like rind that doesn’t distract from
the pleasure of the paste. Moser grew up in a
dairy family producing classic Tilsiter and
other semi-hard cheeses. During an internship
in France, he fell in love with soft cheeses, and
returned home with the goal to start making
his own versions. BonCas produces softripened cheeses exclusively, many of them in
small formats. Moser, who is now assisted by
two of his children, moved into a state of the
art and sustainable facility in June 2023.
Handling
Keep refrigerated. Bring to room temperature
before sampling.
